Salmon burger with homemade lemon mayonnaise

  • 200 g salmon fillet, without skin and bones
  • 0.5 tablespoons parsley leaves, fresh

  • 2 egg yolks
  • 1.5 dl olive oil
  • 0.5 tsp mustard
  • 1.5 tbsp lemon juice

Burger bread

  • 12.5 g yeast
  • 1.8 dl water
  • 250 g wheat flour
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • milk
  • sesame seeds


  • Set the oven to 220 ° C.
  • Finely chop the salmon fillet and parsley leaves, and mix with salt and pepper.
  • Form a flat salmon burger per. person and fry them on medium heat in margarine for 2-3 minutes on each side.

Burger bread

  • Stir the yeast into lukewarm water, and mix with flour, olive oil and salt.
  • Knead the dough well and leave to rise to double size. The dough should be slightly moist.
  • Divide the dough into evenly sized pieces, and bake out into small flat pieces.
  • Place on a baking tray with parchment paper, brush with milk and sprinkle with sesame seeds.
  • Raise to double size and bake them in the oven for approx. 10 minutes.


  • Mix egg yolk and mustard.
  • Carefully add olive oil while whisking vigorously. If the mayonnaise gets too thick, you can add some water.
  • Season with lemon juice, salt and pepper.
